3 Delicious Vegan Meals

For most of us, meat is just part of our diet, and so is dairy. But a growing number have removed meat and dairy, sticking with grains, fruits, vegetables, and legumes. Here are three tasty vegan meals that we found from Self Magazine.

1. Black Bean Tacos with Corn Salsa – When you make these black beans, you won’t be missing the meat. Black beans contain lots fiber, which helps in regulating blood sugar levels as well as improves digestive function. The protein also builds lean muscle. So less calories and still just as filling, check and check!

2. Chickpea-Sweet Potato Burgers with Dilly Cucumbers – Combining chickpeas and sweet potatoes gives you the hearty feeling of a burger without all the extra fat and fewer calories. Not to mention the sweetness from the sweet potatoes gives it an unexpected, delightful kick! Sweet Potatoes and chickpeas also contain lots of Vitamin A, known to fight off bacteria that causes blemishes.

3. Tomato-White Bean Soup with Pesto – Soup without meat or dairy can be challenging, but is just as tasty. This one has lots of Vitamin E, which is good for the heart and who doesn’t love a bit of pesto? Tasty!!
